The current version (1.10.0) of app-emulation/virtiofsd has a bug that prevents it from working on kernels without user namespace support. This is a regression introduced in 1.10.0 and it's fixed in 1.10.1. Since 1.10.0 is the only version currently available in Portage, it's not possible to use virtiofsd without user namespace support.
