According to this old bug https://bugs.gentoo.org/show_bug.cgi?id=237524, nmap needs gtk & zenmap flags to have GUI working. I did build it with those flags but I don't see zenmap anywhere!
It was removed because it needed Python 2.7. nmap-9999 has it restored as they finally ported it to Python 3. The next nmap release will contain it too.
nmap-7.94 is out now (yay!), so...
