Installing sys-apps/liburing-2.0 installs /usr/lib64/pkgconfig/liburing.pc which states Version: 0.7 This is because upstream only changes the version in the spec file after tagging 2.0. A possible solution would be to simply backport 1815337f7dbb ("spec: bump version to 2.0") in the 2.0 ebuild.
