Reminder for myself: 2.6 requires perl-5.24 and thus probably will probably need some time.
No problem if it takes some time. HOWEVER, do not bump the other LaTeX packages to versions that require biber-2.6 until you're ready to bump biber-2.6. Otherwise, you'll create big issues for anybody who uses Gentoo daily for academic work. This was the story with the massive delay for biber-2.5, and it was not very pleasant to work around.
This should be fixed by biber being restricted to ~dev-tex/biblatex-3.x

Biblatex in the tree (2.7) does not work with biber 2.5 from the tree. Please bump biber ASAP.

I suggest putting biber-2.7 in ~ with the right deps, so everyone can decide for himself to merge the package. I wrote the ebuild manually (dependencies are most likely incomplete), and updated to perl-5.24.1-r1. emerge with --backtrack=1000 could then resolve dependencies and pull in the new perl.
