Looks like this was fixed in r1.2 of the chrome-binary-plugins file (http://sources.gentoo.org/cgi-bin/viewvc.cgi/gentoo-x86/www-plugins/chrome-binary-plugins/chrome-binary-plugins-37.0.2062.94_p1.ebuild?r1=1.1&r2=1.2) which removed the pdf option from the ebuild. I guess I must have grabbed it at an unfortunate time... before that fix was made.
