The issue appears to be a change in API in stabilized media-libs/x264-0.0.20091021. I tested this theory by running: 

sudo emerge -1v --nodeps '=media-libs/x264-0.0.20081006' media-plugins/gst-plugins-x264

...which succeeded. As soon as media-libs/x264-0.0.20091021 is used, though, gst-plugins-x264 fails.

I suggest having media-plugins/gst-plugins-x264-0.10.11 depend on some version of x264 less than 0.0.20091021, though which I am not sure.

Apparently gst-plugins-x264-0.10.12 does this too.

The problem is the header /usr/include/x264.h, which with media-libs/x264-0.0.20091021 has no b_bframe_pyramid in the structure x264_param_t.

Emerging media-libs/x264-0.0.20081006 provides this in the structure, however I already have 

  media-libs/x264-0.0.20091021 pulled in by:
    media-libs/libquicktime-1.1.3
    media-video/ffmpeg-0.5_p20373
    media-video/mplayer-1.0_rc4_p20091026-r1
    media-video/vlc-1.0.4

compiled against the new version and libraries...

Sorry, these versions were falsely unmasked. Only the latest version is usable.
