Blender only officially supports python 3.7 upstream to prevent breaking user plugins in production, but they have made efforts to fix compilation bugs so we can experimentally offer python 3.8 support in 2.91.0, 2.91.2 and 2.83.12 (the LTS version). Blender releases major updates to their master version every 3 months as described here https://www.blender.org/download/lts/, and backports fixes to the LTS version every month on average. Version bumps to the latest versions 2.92.0 and 2.83.13 are in progress. For now, I hope to stabilise 2.83.12 (as I have Gentoo users who requested keeping the LTS version up to date) and keep 2.91.2. The other versions can be deprecated when python 3.7 support is removed.
