For me, at least, this issue is only present if the unstable gnome-extra/evolution-data-server-3.40.0 is installed. Once I downgraded to the stable version 3.38.4, mail-client/evolution-3.38.4 compiled successfully as well.

Well the GNOME team obviously was in a hurry to release GNOME 40 but they forgot that Evolution is still an important part of GNOME and though everything that is released is unstable (~) still we will need the whole GNOME 40 :) I guess we will just have to wait for the GNOME team to get to the proper evolution (and companions) versions... like: https://download.gnome.org/sources/evolution-ews/3.40/

It's been one guy doing the whole thing and it's getting there. We're volunteers and getting an email like this from a comment on a bug is extremely demotivating. Stick to technical suggestions for fixes and bug reports, not commentary on our (unpaid) efforts please.
