For long time, and after various reinstalls, Evolution only showed english variants in the list of spell checking available languages, althought I had installed spanish aspell-es, and other Gnome programs like Gedit do correctly spell check in spanish. The solution has been found by jbjoret: "[...] It is not a problem of evolution but Gnome seems not to update a Spell configuration file. If you install the correct languages at the very beginning you won't have this problem. If you install them later... read what's next: - Languages used by evolution seem to be defined in <usehome>/.gconf/GNOME/Spell/%gconf.xml You can try to edit this manually if you understand the way this file works, or just do it as I did it. I created a used with its directory, started gnome, started evolution ... made sure the languages where here, and then copied the %gconf.xml file onto my own. And it works finally Very Happy." "Thank you very much for your tip. I had exactly the same problem. The easiest way is to remove the file: <usehome>/.gconf/GNOME/Spell/%gconf.xml The file will be re-generated..." I deleted that file, restarted Gnome and now spanish appears as an option to spell check the messages.

It's also possible to use gconf-editor and reset all values in /GNOME/Spell/. After a restart of evolution the new languages are displayed correctly.
Unfortunately /GNOME/spell isn't included in the defaults, it's created per-user which means it'll be difficult to update via portage (for example, after a new aspell-dict is emerged). App-dicts/Liquidx, any suggestions?
well, seems like short of magic, you won't be able to modify per-user configuration. detecting available languages at install time and putting them in /etc/gconf is also not going to help the situation since people might install dictionaries afterwards. i think it is an upstream bug more than anything.

gnome-spell-1.0.7-r1 should resolve these issues, please test.
