I don't run a gconf/orbit stack, added a gconf use flag in order to avoid pulling gconf and orbit.

Sorry, doesn't work like that. You really want gconfaudiosrc/gconfvideosrc/gconfaudiosink. This situation currently sucks, but we don't have a better solution right now. Sorry... I'm almost tempted to add gnome-media as a depend so you can have gstreamer-properties to configure it (although you can just use gconftool or gconf-editor)
Pidgin seems works perfectly on my setup without gstreamer gconf plugin. Please provide more information on what does not work if there is no gconf use flag.
Without it, you can only use the first sound card. So like you can't pick between the built-in or external microphone or can't use usb hearphones.. Well except if you use pulseaudio
In text only chat and one soundcard computer, gstreamer is used only for beeping on that souncard. Then let's update the ebuild defaults. gconf on would be the default.

pidgin 2.7.0 did the same thing, forcing gtk, X, and cairo to be emerged
pidgin-0.7.0.ebuild seems functionally identical to 2.6.6 other than minimum gtk+/glib version and forced gstreamer (upstream bug; see http://bugs.gentoo.org/319557).
