On my machine the most recent version of Evolution has problems dispaying both custom and stock icons. (I'll attach a screenshot shortly). Neither re-emerging evolution nor gtk+ has fixed this for me. I've tried running gtk-update-icon-cache to no avail. Other GNOME components don't have this problem (see gedit on the screenshot). Can you try downgrading hicolor-icon-theme to 0.8?
Downgrading hicolor-icon-theme fixes the problem. Thank you!
