Your X setup is pretty busted here. Gilles, what format is that build.log, I can't read it... nvm, firefox sucks... And USE="-minimal" xorg-server (that's where it might fail, because USE=minimal doesn't build the Xvfb at all) I've added minimal needed fonts for Xvfb to run until xvfb ebuild is fixed to RDEPEND on them or whatever. I've also disabled all tests that failed due to gentoo specifics: recentmanager -> sandbox issues, can't make it write elsewhere than /root with my current portage settings ui key-events -> couldn't figure out why this doesn't work in sandbox but disabled as well. I'm closing this fixed since I can now build gtk+ with tests enabled but those which are disabled should be brought to upstream's attention so they can make them easier to test.
