AFAIU "plain" is sufficient -
additional "-k5.12" not needed in this case:

     w16.1.2
     p16.1.2

compared to

     w16.1.1-k5.12
     w16.1.0-k5.12

CONFIRMATION:

Removing the additional " -k${MY_KERNEL_VERSION} " 

   in      SRC_URI=
   and in  S=

   WORKSFORME

( at least for a quick first test starting up a Win10.21H1 ) .

I suspect this gcc upgrade bump to cause the following

Extracting  just .../app-emulation/vmware-* 
  from Stefan‘s Overlay
  into an essentially stable Gentoo minimalistic local overlay

WORKSFORME, including Tools upgrade:

Remember to source "/etc/profile" in each terminal you intend to use the new gcc, after switching to it with "gcc-config".

I do: ". /etc/profile; . ~/.bashrc"
