emerge --info

When I enable the "Typeset using LaTeX" menu entry in Cantor, instead of the output rendered using LaTeX, I get a black rectangle with some pixels in random colors. LaTeX output used to work some months ago (I know it worked when I used it before the start of summer and that it stopped working when I used it again in September. Unfortunately, I can't be more precise).

I forgot to say that I'm using the Maxima backend

Try to start cantor from console so that you can see if there are error messages to STDERR. 

Try to find out, where the temp files of cantor are. Perhaps you can see a problem there.

The situation seems to be a bit more complicate and requires some analysis.
We can not help you efficiently via bug tracker. The bug tracker aims rather on specific problems in .ebuilds and less on individual systems. 

I have had very good experience on the gentoo IRC [1] with questions like this. Of course there are also forums and mailing lists [2,3].
I hope you understand, that I will close the bug here therefore and wish you good luck on one of the mentioned channels [4].
Please reopen the ticket in order to provide an indication for an specific error in an ebuild or any gentoo related product.
