The Mozilla team is usually aware of all updates, but needs some time to test packages. Please have a look at

There is an ebuild for thunderbird-60 in mozilla overlay if you want to test -- currently it has some issues related to localization that I am trying to address before releasing it in gentoo repo.

This has been resolved, thunderbird-60 is available in Gentoo repository for some time now.
