Sorry for the poor description, but the problem is really blocking, I can't neither update my system.

When I launch emerge the system goes kernel panic after calculating package list, the backtrace is so long I can read only the final part, which is unusable.

Starting a Steam game, who uses openssl too, gives a shorter backtrace when panicking:
/usr/lib32/libcrypto.so.1.0.0: no version information available
/usr/lib32/libssl.so.1.0.0: no version information available

I'll try getting more infos, maybe launching emerge via ssh from another PC...

Do you have CONFIG_PAGE_TABLE_ISOLATION enabled in your kernel? If yes, do the errors vanish when you boot without Page Table Isolation?

I'll check for CONFIG_PAGE_TABLE_ISOLATION, meanwhile I've launched an emerge via SSH and this is the output before the freeze:

Actyally kernel 4.14.11-gentoo has
CONFIG_PAGE_TABLE_ISOLATION=y

I'm building 4.14.11-gentoo-r2 with
CONFIG_PAGE_TABLE_ISOLATION=n

I'll let you know if the problem vanished

Without Page Table Isolation the Kernel Panic vanished

Please re-test 4.14.11-gentoo-r2 with CONFIG_PAGE_TABLE_ISOLATION enabled. This revision contains important patches. We need to know if this issue is fixed or if you are facing a new/yet unknown issue. Thanks.

I confirm that 4.14.11-gentoo-r2 with CONFIG_PAGE_TABLE_ISOLATION enabled works fine.
