Downgrade to media-sound/pulseaudio-10.0:0 fixes problem.

Just pushed 11.1 to the tree, it contains some important bug fixes. If this does not fix it for you could you open a bug report upstream and add the URL in the URL field of this report please ?

pulseaudio-11.1 fixed my problem.
Both playback and capture works perfect.
