Currently we don't have any stable version of borgbackup in the tree. Can we stabilize it on amd64? (Not sure if there's interest for other archs.)
yes TARGET=amd64. if you've been using it, then we can probably save the amd64 team some work and stabilize it ourselves.
I, too, am using borgbackup 1.0.7 for some time now and it works just fine so far (in fact I think its a great tool, yay!). The only potential future issue I see is with the dependency on llfuse. With current stable 0.40 in Gentoo tree I have no problems, but 0.40 is from 2013 and will probably update some day? From the llfuse documentation: 1.0 maybe breaks API - so future stabilizations of borgbackup on Gentoo need to consider llfuse version? I'm just a bit nervous about future upgrades (borgbackup 1.x and llfuse 1.x) because backups are important....

If possible, have some test backup and check the candidate version for possible problems. Do both a back *and* a restore. Let me know if you find anything bad.
