I used the same .config, I also tried make localyesconfig and I also tried to make a brand new VM using a bare bones kernel with absolutely nothing initialized. Just exit out of menuconfig, make && make modules_install. Same kernel panic. I started thinking it was the host. I fully upgraded from VirtualBox 4.3.23 to 5.0, both via the package manager and via direct download. Same kernel panic

I was able to get a 3.10.82 kernel to compile and boot. gentoo-mini ~ # uname -ra Linux gentoo-mini 3.10.82-gentoo #1 SMP Tue Oct 13 20:02:19 EDT 2015 x86_64 Intel(R) Pentium(R) CPU N3540 @ 2.16GHz GenuineIntel GNU/Linux but that's still pretty old. I used the default .config
I can get as high as 3.12.48 will successfully boot. anything above 3.17.7 will fail with kernel panic.
Any kernel 3.12.999 or lower works. =<3.14.0001 fails epicaly with the same kernel panic. 3.12.999 is the absolute ceiling that i can get to work on a Virtualbox VM.
could you try on a more recent gentoo-sources ?
