Sometimes doesn't even give this, just locks up the system maxing out the CPU

the kernel killed the compiler.  you should figure out why.  read `dmesg`.

after that, the errors are meaningless.

Fair enough. So guessing this is the answer...

..is it just a simple case of not having enough memory? (I mean I know that's why the process got killed but is just a simple case that it needs more to compile rather than something has gone wrong and it's spiraled into some death spin and consumed all it can find?) It's only a simple web server with 1GB allocated but I've never had a build fail because of lack of memory. Does the thin-provisioning-tools build need a fair amount to build?

I appreciate you might not be able give me straight answers to my questions, just looking for bit of input :)

thin-provisioning-tools is C++, and uses boost which is a heavyweight C++ library, known to be heavy for compiler just as eg. building libreoffice or kde

you might want to disable USE="thin" in sys-fs/lvm2 to avoid building thin-provision-tools altogether if you don't need it

I thought it was a core dependency as my system is eventually trying to emerge grub2. But if it's not, then I won't bother with it
