Go to file/page setup then change the paper size, "apply". Then do the same and the paper size is back to A4. One can change between portrait and landscape, but gnucash really likes the A4 paper size. Do you have the same problem on a new created user account with a new home directory? In that case, try running gnucash from a terminal to try to get better errors and messages while reproducing the issue
I always run gnucash from a terminal. If I choose "Sam" (my default printer), then A4 is the only choice that is permanent. Perhaps that suggest something? Sam is a Samsung printer that accepts PCL4 or PCL5. I tried it on user account which had not run gnucash before. For that one, I couldn't get the choice Sam to stick. I could select Sam then paper size would go to A4, and even if applying that for Sam, it came back as any printer when going back to the menu page setup menu. And in this case nothing was printed in the terminal window, perhaps because there was no account to open. Just tried again with my usual user. And Sam won't stick there either if I just try from the starting screen. It is only when printing reports that I can select Sam and have it persist. But of course only with A4.
Did you try to print from other apps? (other gnome apps, chromium, firefox...), maybe it's related with the configuration or drivers used in your printer
I have printed from other applications without problems. Chromium is one of them. I'm not clear on what is a gnome app and what isn't. I'm running an xfce4 desktop.
Try with gedit or epiphany for example
