I have at least six different Gentoo VMs inside of virtualbox and all are running fine. So my assumption is that either some virtualbox settings are not okay (like using ICH9 chipset which is still considered experimental by upstream and tens to break things quite often) or your configured kernel lacks some features or has features enabled that are incompatible with virtualbox VMs. Please provide more information like VBoxSVC.log file and the kernel config you were using in the VM.

the first two installs did have minor adjustment to the kernel like ethernet bridging but the last time I installed was 100% pure defaults on everything single item, to prove a point.
CHOST="x86_64-pc-linux-gnux32" Unless this is what you intend, you have likely downloaded the wrong stage3. Either add CONFIG_X86_X32 to your kernel (you haven't given us the .config, yet...) or start over with an actual amd64 stage3. (There are very few instances where you have to actually start over. This is one of them.)
