lm_sensors 2.8.3 fixes bugs related to the i2c-amd756 module that my system uses.  An ebuild for 2.8.3 would be great.

Can you see if lm-sensors-2.8.2.20040111 fixes your problems? 2.8.3 might be troublesome as it breaks things for 2.6.0 users...

Hmm, ignore that last comment: lm-sensors-2.8.2.20040111 already breaks things for 2.6.0 users and it already contains the i2c-amd756 fixes. I'll bump it to 2.8.3 anyway as it adds some smartbatt fixes.
