I did a (supposedly successful) emerge sync and immediately followed it with a
  emerge -u system
I've been sitting here for hours watching it trying numerous urls trying to download the file :
  coreutils-5.0.91.tar.bz2
From the output it appears that the file does not exist.

The following is the output of my emerge info

You are missing mirrors..  in your /etc/make.conf file, add (or rectify) the following line:

GENTOO_MIRRORS="http://gentoo.ussg.indiana.edu"

Then re-try the emerge.
