Took me all morning to remember to enable GPT in the kernel configuration under "File systems->Partition Types->Advanced partition selection->EFI GUID Partition support" on a new install. By mentioning GPT in the kernel config section it will also tie in to the "Optional: Setting the GPT Label" under http://www.gentoo.org/doc/en/handbook/handbook-amd64.xml?full=1#parted

Using existing examples the code section should probably look like:

File systems --->
  Partition Types --->
    [*] Advanced partition selection
    ...
    [*]   EFI GUID Partition support
