You say, "should always be latest stable" but 5.3 is the latest stable, I don't understand what is going on...

This one should have been changed when 5.3.4 went stable, but only for the archs that it is stable on. I was somewhat confused about exactly which make.defaults files should be modified so I asked mabi to take a look at it. If anyone know what they are doing better than me, they have my blessings to change this variable for all profiles 5.3.4 is stable on.
