roundcube requires the sqlite use flag on php to be set even though the postgres use flag is set for it on a per-package basis. I am unable to reproduce this bug when postgres is only set for roundcube on a per-package basis. Can you post your emerge --info?

I think I may have fixed this in the roundcube-0.5_rc that I just added to the tree. I added a sqlite USE flag that defaults to on so it is used for db support by default if nothing else is requested. If you want something else just set "-sqlite" and enable whatever you want in your package use flags.
This problem is still there in 0.5_rc for those having php built only with +mysql, +mysqli or +mssql (which are all valid DB backends for roundcube).
Ok, I should have read #3 better. Setting -sqlite on mail-client/roundcube works. Sorry for the noise.
Closing as this should be fixed now when USE="-sqlite" is set.
