The Makefile parameter NO_PERL was included in the next upstream feature release 1.6.3 and not in the bugfix release 1.6.2.5. But in the git-1.6.2.5.ebuild the epatch line for applying the 20090305-git-1.6.2-noperl.patch is commented out. I think it should by included for the 1.6.2* releases. The patches applies without a problem on 1.6.2.5 and works great for me.
