You failed to understand the output. lm_sensors 3 were a major redesign over 2. Some of the parts of v2 series were moved to a different package (I think it was exactly i2c-tools), so you need to unmerge v2 series first to prevent file collision.
i2c-tools was split from lm_sensors starting from version 3 of the latter. As <lm_sensors-3 installs some of the same files, having both installed would lead to file collisions. Unmask >=lm_sensors-3 and unmerge <lm_sensors-3 and you should be OK.
