There seems to be no easily accessible list of gentoo projects on the main page
(www.gentoo.org). I am refering to those found in www.gentoo.org/proj/en/*.

Is this something that I would be able to work on? Could I just copy the format that already exists and add summaries for each project?

Well, there is now a list of projects. It should though be fixed a bit, and will probably be put in proj/en/index.xml tomorrow.
