If I do: 
 
emerge dev-perl/Unix-Syslog 
emerge dev-perl/Convert-UUlib 
 
then it works. But both Unix-Syslog and Convert-UUlib were installed before. It seems 
something is messing up their installation (maybe upgrading perl does this?)

Both of these packages are in the DEPEND of amavis... If you upgraded perl it is possible that those perl modules didn't get upgraded properly.  Moving from 5.6 to 5.8 is not the smoothest of processes although I know our perl guru(s) have done their best to make upgrading perl modules as seamless as possible.

I have had no problems emerging amavis on either a 5.6 or a 5.8 based perl.

Since it is apparent you have upgraded.  Please re-emerge both of those perl modules and then try emerging amavis again.
