The man page for ping is not consistant with the current ping. An example is that it does not include all the parameters that ping allows. ie. ping -I is not included in the man page. This issue I expect should be passed up-stream.
which ping are you using tho? sys-apps/netkit-base or net-misc/iputils ? the net-misc/iputils one is quite up to date.

The issue with the man page not being consistent with the actual parameters of ping from the netkit package is still a valid concern though.
I've mailed the upstream maintainer about this, I'll let you know about the answer when I get it.
