somewhere so I can see where during the compile exactly 
the access violation occurs?

lots of packages use :  addwrite /var/cache/fonts (or   use doc && addwrite /var/cache/fonts )
when building latex documentation. This is needed for latex to build its fonts/cache if it cannot find it.

If I could reproduce such an error, I could try 
"export VARTEXFONTS=somewhere in $T" to overide tex configured dir and then it would write to $T what wouldnt cause problems...
or export VARTEXFONTS="${T}" TEXMFVAR="${T}" USE_TEXMFVAR=1 as suggested in bug #98854

just adding 'export VARTEXFONTS="${T}/fonts"' before using any (la)tex related stuff should do the trick.

I just committed the suggested addition of export VARTEXFONTS
to the ebuild to portage.
