If I compile OO.o-2.0.2 with the hi (Hindi) LINGUA then I cannot save as odt, sxw, ods etc. - basically all the xml based formats. If I comment out the LINGUA in my make.conf and then build OO.o-2.0.2 then the problem goes away.

I don't think it'll be necessary for bugfixing but if you need a good Hindi font, you can find one at:

Sounds like the filters are not created correctly, (see also bug #110131), in this case most likely a result of not being fully translated, so might be the best to remove hindi-language-support for now

Did you try to build with both hi and en LINGUA? If not: Would you try and see if this changes anything?

After building openoffice-2.0.2-r2 with the en LINGUA I was able to save files in .odt and .ods formats.

I think this could have been an error on my part, the correct LINGUA-variable for Hindi is hi_IN and NOT hi, so the problem might have been, that no translation was built at all. I've fixed that now, so could you please "emerge --sync" (give the mirrors some hours to catch up) and try again with the hi_IN LINGUA?
