There is an unstable release of evolution 2.5.91.
The bug with german letters should be already fixed there.

Could someone provide an unstable ebuild for that?

unstable development versions don't go into the portage tree. A 2.5/2.6 version of evolution will be available once gnome-2.14 rc1 is added to the tree.
