During the compilation of evince-0.4.0-r2, a sandbox violation occurs.
The remerge of the gnome-doc-utils (recommended in similar bugs of evince)
doesn't help.

I had the same problem (http://bugs.gentoo.org/106073).
I emerge sandbox (1.2.3=>1.2.12) and reemerge evince and it emerge correctly.
