Since version 1.2.0 the book sources are no longer included in the archive.
This results in a different source path for the book, i. e. the book is no
longer installed from "doc/book/book" but from "doc/book".

I'll attach a patch for the 1.2.0 and 1.2.1 ebuilds, though the patch
does not fix the bug in the 1.2.0 package/archive where both the
"images" sub-folder and the stylesheet are missing.

Thanks, I've fixed this for 1.2.1.
