do we really need a live svn ebuild? I believe it's a much better idea to use daily snapshots from http://www.gajim.org/downloads/snap/ I've asked server maintainer to pu gajim-latest.tar.bz2 symlink, which should appear soon. The i'll be happy to take this ebuild.
To make Fabian Neumann's ebuild Work For Me Too, I had to add 'gajim.desktop' to the list of make targets. Patch attached in case you need it too.

I don't think using gajim-latest.tar.bz2 is a good idea - you have to delete it manuly from distfiles and disable deltup. (Because deltup compares filenames, not the dates of creation.) And what about checksums? I think gajim-svn-20051224.ebuild format is the way.
Live SVN ebuilds are not what Gentoo ebuild policy prefers. Feel free to use in your local overlay or submit to BMG overlay e.g.
