I cannot reproduce it here. Please attach the complete build log and try again with -j1.
Wipe out any libgadu you have installed outside of Gentoo, like those in /usr/local. They are probably interfering. Attach *full* build log, maybe there's hint which libs are really picked by cmake. This bug looks a lot like bug 262488

Do you have manually compiled libgadu in /usr/local or any other location different than /usr? (so do you have /usr/local/include/libgadu.h?) Do not take line from build log: "#define GG_CONFIG_HAVE_PTHREAD" seriously - that check using grep is broken.
