If I launch sunbird from terminal or gnome menu I got it in English also if Italian Language pack is installed , only launching with "-UILocale it-IT -contentLocale IT" arguments makes mine sunbird speak italian. I also noticed that sunbird ebuild does not support linguas it . Sync in an hour or so and reemerge, it should put italian by default. That was because i missed the it langpack, sorry about that.

You need to do this: Go to: Edit -> Preferences -> Advanced -> Config editor, search for general.useragent.locale , and change the locale there.
