I recently updated my squid from 2.5.12-r1 to 2.6.3 and found to my dismay that all my custom error pages in /etc/squid/errors had been overwritten and I was never prompted to update them with etc-update. Only after the fact did I notice that the errors directory really just a symlink to /usr/share/squid/errors/English and given my experience with gentoo thus far, I assumed any config files in /etc would not be overwritten without my consent. I didn't see any obvious warnings when installing or upgrading squid, perhaps this is something that could be added so other system administrators know about the risk before updating squid.

/etc/squid/errors is a symlink to :
 - for squid 2.4 /usr/lib/errors/English
 - for squid 2.6 /usr/share/squid/errors/English

If you changed those errors, you should be able to find them in the /usr/lib/errors/English, because AFAIK portage don't remove files that have been changed by the user, although it might overwrite them if that location isn't in CONFIG_PROTECT.
If you really want those files protected you should add those file to CONFIG_PROTECT or replace /etc/squid/errors symlink with a directory containing your custom error templates.
