After updating my make.conf to USE="-wayland" globally i'm not able to emerge sushi anymore. Unfortunately disabling USE=-wayland on gtk+ will drop some ABI and libraries linking against gtk+ that detect USE=wayland on gtk+ at build time and use that ABI need to be rebuilt then. We have no good way to force such rebuilds without forcing everything to be in lock-step in regards to USE=wayland, which isn't correct either. In this specific case, you need to rebuild evince, and then sushi will succeed (or fail on another thing that needs rebuilding). I figured that out from this line in your build.log: /usr/lib/gcc/x86_64-pc-linux-gnu/10.3.0/../../../../lib64/libevview3.so: undefined reference to `gdk_wayland_display_get_type' whereas libevview3.so is installed by evince. Thus really evince has the problem and needs rebuilding.
