SnapRAID 11.2 is available and has some useful bug fixes over the version currently in tree. All that I needed to do to make the existing 11.0-r1 ebuild work was bump the version number and remove the patch (as it was applied upstream with version 11.1 and is now redundant).
I've submitted a PR on GitHub for this bug: https://github.com/gentoo/gentoo/pull/8143
