It should depend on glibmm[doc?], but it doesn't :S

Can you confirm merging glibmm[doc] solves this for you?

It seems that dev-cpp/gtksourceviewmm-2.10.2 doesn't have this problem. I emerged it with USE=doc fine while glibmm was -doc.
