As per -> http://www.gentoo.org/doc/en/bluetooth-guide.xml
there is no know way to pair a bluetooth device that I can find without a script called 'simple-agent' which is nowhere to be found in the regular bluez package and must be assumed to be in the bluez-utils, which doesn't exist.
It's called a pickle!

An out of date guide is a bug of the guide, not the package - if you want to you may file a bug against it, but again, the disclaimer.

As for the utilities, there are test-programs and old-daemons useflags on bluez, but given their names, there should already be alternatives to them provided by the package (my disclaimer: I don't own any bluetooth devices, so I'm not speaking of my personal experience).
