This page mentions the need for vesafb for 64-bit systems:

But this page, where we're configuring the kernel, makes no mention of it:

You might want to also include mention of what options are necessary.

There's no need to include it, as it's strictly optional. This kernel configuration is strictly for correctly detecting and working with the critical hardware so that you can get your machine to boot. Not everyone needs or wants a framebuffer.

The "bootloader" section of the handbook specifically says setting up a framebuffer is optional; i.e., if you're smart enough to do all this, you're smart enough to go back to your kernel and recompile it with vesafb support.
