app-antivirus/clamav depends on sendmail, which is a blocker when postfix is
installed.  This could be a bug depending on who you ask ;-)
Can you remove sendmail as a dependency (and instead require some generic
package that covers compatible smtp servers) OR create a separate
postfix-compatible ebuild?

Disable "milter" USE flag.

I am using without any problems with postfix on amd64 - but milter is sendmail 
specific hence the dep.
