Your local machine has GCC 13 while your kernel was built with GCC 12.
* Warning: kernel 6.1.53-gentoo-r1 is built with gcc-12 but * '/usr/lib/ccache/bin/x86_64-pc-linux-gnu-gcc-12' is not gcc I assume it existing but broken, otherwise it would've fell back to gcc-13 (which can work if gcc plugins weren't used, albeit not very recommend to mismatch major version with kernel still). But yeah, just `make clean` and rebuild your kernel with current toolchain, then it'll use gcc-13 normally.
