It's because more recent versions of firefox/thunderbird/mozilla suite use mozilla-launcher (look at the contents of /usr/bin/firefox), which attempts to open a link in an existing window if possible, or in a new instance if not. If mozilla-launcher were to redirect output to /dev/null during it's attempts to start the browser/mail client, you wouldn't see any potential errors.
