Issue: media-gfx/darktable-4.0.1-r1 adds debug flags (-g/-ggdb) on its own.
Discovered on: amd64 (internal ref: ci)

NOTE:
while I know that at the end, the binaries are stripped, debug flags slow down the build process and take more disk/ram.

Seeing as this has not been updated for 4.2.0 and newer, assuming optimistically that this has been taken care of upstream.
